- Ladyfinger Sponge:
67g egg whites
67g sugar
45g egg yolk
67g flour
powdered sugar for dusting
- Vanilla Bavarian Cream:
6.6g gelatin
55g egg yolk
70g sugar
220g milk
vanilla extract, a few drops
220g whipping cream
🐟 Taiyaki
- Red bean paste:
100g azuki beans
water
87g sugar
0.25 tsp kosher salt
- Taiyaki batter:
75g cake flour
1/2 large egg
90ml whole milk
1/2 tsp baking powder
1/2 tsp baking soda
20g sugar
neutral oil (for cooking)
