Everything You Need to Know About Cooking Garlic!

First, I’ll show you how to make soft, buttery Garlic Confit and preserve fresh garlic as convenient frozen Garlic Purée. Then we’ll prepare delicate Slow-Roasted Garlic and turn our confit into a creamy Harissa Garlic Aioli that is incredible on sandwiches, hamburgers, fish, seafood, or just about anything else!

Finally, we’ll put everything to work in a beautiful Garlic Shrimp dish with cherry tomatoes, white wine, butter, Pecorino Romano, and crispy crostini. We’ll use both fresh garlic and garlic confit to create layers of flavor—one strong and aromatic, the other mild, sweet, and buttery.

I’ll also explain why the way you cut and cook garlic changes its flavor, how to keep it from burning, and when to add it to your recipes. Five preparations, plenty of practical tips, and enough garlic to make your entire kitchen smell amazing!
