Should you fry Italian meatballs or simmer them directly in tomato sauce? I tested both, and the best meatball wasn't in the best sauce.

Everybody has their own way of making meatballs, and most people will defend it like family tradition. Some swear by frying them in olive oil before finishing in sauce. Others drop them straight into the pot, claiming a more tender meatball and better flavor. So I made two batches using the exact same beef, veal, and pork recipe to finally settle the debate.

After 45 minutes and a blind taste test, the results surprised me. The simmered meatballs were more tender, but the fried meatballs produced a richer, deeper sauce. The solution? Stop choosing sides. Fry half, simmer half, and get the best of both worlds.
