04:45 (Monday Dinner – Roast Chicken, Roast Potatoes, Miso-Glazed Brussels Sprouts & Gravy)

Roast Chicken

Ingredients:

1 chicken
2 tbsp butter, cut into 4 cubes
4 garlic cloves, peeled
1 sprig thyme or rosemary
1 lemon, quartered
Olive oil
Salt

For the gravy:

2 tbsp plain flour
A splash of white wine
¾ cup chicken stock

Method:
Take the chicken out of the fridge at least 30 minutes before cooking. Preheat the oven to 180°C / 350°F. Loosen the skin over the breasts and tuck 2 butter cubes underneath. Squeeze over the lemon, then stuff the cavity with the lemon, herbs, garlic and remaining butter. Rub with olive oil and salt, roast breast-side down for 30 minutes, flip and roast for another 30 minutes or until cooked through. Rest for 10 minutes before carving.

For the gravy, skim the fat from the pan juices. Whisk in the flour, add the wine, then gradually whisk in the stock. Simmer until thickened and strain if desired.

Roast Potatoes

Ingredients:

4–6 white potatoes, peeled and cut into roughly 1-inch pieces
2 tbsp duck fat
1 tsp salt (plus extra for serving)

Method:
Parboil for 10–15 minutes until just tender. Drain and steam dry for 2 minutes. Toss with duck fat and salt, then roast for about 30 minutes until golden.

Miso-Glazed Brussels Sprouts

Ingredients:

300g Brussels sprouts, halved
Neutral oil
Salt and pepper
1 tbsp shiro miso paste
2 tsp rice wine vinegar
1 tsp mirin
1 tsp sugar
2 tsp water

Method:
Mix the glaze ingredients until smooth. Pan-fry the sprouts cut-side down until browned, flip and cook for another few minutes. Toss with the glaze, transfer to a tray and broil for about 5 minutes until caramelised.
