Apple & Blackberry Crumble
topping:
200g plain flour
150g caster sugar
150g cold butter (cubed)
filling:
3 medium apples (peeled & chopped)
200g blackberries
1. add fruit into your baking dish and flatten with your fingers so there are as few cracks as possible for the filling to fall through
2. add your flour, butter and sugar to a bowl and rub the butter in the flour and sugar, keeping going until you reach a lumpy sand texture (should take about 5 minutes)
3. pour the crumble onto your fruit and flatten again
4. bake for 30-40 minutes on 180c until golden and bubbling, the apples should feel soft when stabbed with a fork. enjoy! :)
Sourdough recipe:
ingredients
350ml warm filtered water
150g active sourdough starter
500g bread flour
15g salt
- mix starter and warm water together, add the flour and mix into a shaggy dough
- let sit for one hour
- stretch and fold every 30 minutes for 2 hours
- then bulk ferment on the counter for 4 hours
- tip dough out onto floured surface and shape
- refrigerate overnight (12 hours)
- when ready to bake, get dough out of fridge and preheat oven to 220c
- score dough and bake on 220c with lid on for 40 mins
- then lower to 200 and bake for 10 mins with the lid off (watch for colour until browned)
