Mama’s Old-Fashioned Pear Preserves | Southern Canning Recipe
There is nothing quite like a warm, buttered homemade biscuit topped with sweet, clear pear preserves made just the way Mama used to make them! In today’s video, we’re stepping back in time to make traditional old-fashioned pear preserves from scratch.
With fresh pears, sugar, and a whole lot of love and patience, we’ll cook them low and slow until the syrup turns rich and clear and the pears become tender and translucent. Whether you’re putting them up in jars for the winter or sharing a jar with neighbors, this classic Southern recipe is pure comfort food.
Pull up a chair, grab your favorite apron, and let’s get cooking!
🍐 Mama’s Old-Fashioned Pear Preserves
Yield: Approx. 2 small jelly jars (half-pint / 8 oz jars)
Style: Thick, rich, and syrupy Southern preserves
The Golden Ratio (Per 1 Cup of Pears)
1 cup sliced, peeled pears (heaping)
¾ cup granulated sugar
⅛ tsp salt
Ingredients (Small Batch – 2 Half-Pint Jars)
3 cups fresh pears, peeled, cored, and sliced
2¼ cups granulated sugar
⅜ tsp salt (or a generous ¼ tsp)
(Note: For a larger batch of 6 cups of pears, use 4½ cups sugar and ¾ tsp salt.)
Instructions
1. Prep the Pears
Use ripe but firm pears (letting freshly picked pears sit for a couple of days develops the best flavor).
Peel the pears. Cut sections away from the center to easily avoid cutting into the core/seeds and prevent tough flecks in your preserves. Slice evenly.
2. Cook to Syrupy Perfection
Add the sliced pears, sugar, and salt to a heavy saucepan or pot over medium heat.
Stir gently until the sugar dissolves and juices form.
Bring to a simmer and cook until the pears are tender, translucent, and the syrup becomes thick, golden, and sticky like honey (be mindful not to scorch). Boil until it reaches the soft-ball stage, 235 to 248 degrees. Turn off the heat and pour up immediately.
3. Jar & Seal
Spoon the hot preserves and thick syrup into clean, sterilized jars, leaving about ¼-inch headspace from the rim.
Wipe the jar rims clean with a damp towel to ensure a good seal.
Place the lids on and screw the bands on until fingertip-firm.
Carefully invert (flip upside down) onto a towel-lined counter. Allow the heat of the hot preserves to help seal the lids.
Once cooled to room temperature, turn upright. Listen for the classic “pop” confirming the jars have sealed properly.
Serving Suggestion
Serve warm over hot, buttered homemade biscuits with a side of savory breakfast sausage!
